shortbread cookie sandwiches

 Even if you're single, aren't a fan of Valentine's Day, or are just cold-hearted, tiny treats are a great thing. These heart-shaped goodies aren't only appropriate for V-day, but can be made anytime.

Shortbread Cookie Recipe {adapted from Joy of Baking recipe}-
Ingredients
2 cups all-purpose flour
1/2 cup sugar
2 cups flour

Directions
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
Beat butter with electric mixer until smooth and creamy. Add sugar and beat until smooth. Stir in sifted flour until incorporated. Flatten dough into disk and refrigerate for 1 hour. 
On a floured surface roll dough and cut into hearts. Place hearts on prepared baking sheet.
Bake for 8-10 minutes or until bottoms are golden brown. Cool on rack.

Buttercream frosting recipe-
Ingredients
1/2 cup {1 stick} butter
1 cup confectioner's sugar
1 teaspoons milk
1 teaspoon vanilla extract
1 drop red food coloring

Directions
Beat slightly softened butter until smooth and creamy. Add in sifted confectioner's sugar, milk, extract, and food coloring and beat until smooth.

To assemble:
Pipe frosting onto bottom of one cookie. Place a different cookie of similar size on top.
